Out of the Frying Pan, and into the Frier

There's some old buccaneer/fishermen recipes that still survive today in various degrees of variation in sea borne countries/communities.

The simplest one is unpeeled potatoes boiled in sea water.

Cinnamon Duff - Lil Willy's recipe, Pagan Pete's favorite!

Needed: Medium sauce pan, good stirring implement, Flour, Salt, Sugar, Cinnamon, milk, fire.

Step 1) Into a medium sauce pan, put 3 heaping tablespoons of sugar (raw sugar works best) use 2 if you prefer a more "adult" flavor

Step 2) Into that put 3 heaping tablespoons of flour.

Step 3) A pinch of salt and  a few jiggers of cinnamon

Step4) Ad enough water to cover the dry ingredients with about 1 inch (2.5cm) of water.

Step 5) Stir BRISKLY until ingredients are a smooth slurry

Step 6) Ad about half as much again of milk. ( you can use less water and more milk if you like a richer result)

Step 7) Put over medium heat and stir frequently until...

Step 8) When the mix becomes hot, stir constantly or it will burn.

Step 9 ) Stir until the mix becomes thick, and goopy.

Step 10) take off the heat and WAIT several minutes before serving. it will be as hot as napalm and holds the heat well. it will burn staggering drunken sailors like nobodies business!

Enjoy!

Historical notes: Cinnamon Duff is also GREAT if you have a stomach ache. In the Carribean it is also used as baby food, for the sick, and for the elderly. But At sea, Sailors LOVED to have duff! A good ship served it twice a week. Most crews got it on Sunday. Historically it was sweetened with molasses… Don't do this. I've tried that, and Its disgusting. Use sugar like you stole it :)
