I recommand you to start with something like this

For wood:

https://www.amazon.de/Constructo-D80702-Holzbausatz-Albatros/dp/B000WZH7CC/ref=sr_1_1?ie=UTF8&qid=1521028285&sr=8-1&keywords=constructo+schiffsmodelle

They seem to look easy to build but without experience they are still very very hard to build and with around 90€ they arent really expensive compared to other kits.

If you prefer plastic

https://www.amazon.de/dp/B01D4QFK1K/?coliid=I62MBMXSCB2Q5&colid=1ALAD5MXNB9Q8&psc=0&ref_=lv_ov_lig_dp_it

thats a good start as well

Yes a kit is best to start with but dont start with a kit for more than 100€ if you dont have advanced knowledge in wood working or model kit building at all.

Constructo makes pretty good models for beginners. Its still not easy to build  them and they may not be the best looking ones but a good way to start with. http://www.constructo.es/

When you gain knowledge you can still improve these kits by making for example a custom anchor. Small bits with a lot of room to improve your own skill.

Sure model kits of this factory look much better http://www.amatimodel.com/en/models/naval/classic/victory-models but I tell you without the basic skills your final model will not look somewhat near these nice pictures.

Dont try images?q=tbn:ANd9GcQLgUzPz85I0Sy4zz9Dg4- using plans like this for your first project. You really need advanced knowledge and tools for it.

Books that helped me:

The Genesis fellows put up a great step by step with (almost)entry level DeAgostini HMS Victory.

More than the model construction itself it is the techniques that matter the most IMO.
