Besides using the warehouse space at a few outposts, as was suggested already, you can also park an Indiaman and load it up - using it as a warehouse. I mistakenly hit "sort" one time and nearly lost my shit for about 15 mins while I re-arranged according to hardness of woods and location of materials on the ship....
